For fibre and flavour

Baked goods can be enhanced with the addition of dietary fibre to support good digestive health. At Bakery China, visitors will learn how Nexira ’s acacia gum not only adds soluble fibre but it also improves the homogeneity and definition of the shape and crispiness of baked puff snacks. In addition, it works as an all-natural GMO-free texturiser, emulsion stabiliser, film former, compression agent, binder and carrier for encapsulation.

 

Visitors can also meet Sensus , one of the world’s largest suppliers of inulin, to understand how its soluble dietary fibre is being used by over 2,000 manufacturers in 70 countries to produce many successful health-focused dairy products, baked foods, sweets, drinks, cereals, and cereal bars. As  Sensus inulin has a neutral taste, it can even enhance the flavour of baked goods.

 

For protein and texture

The SI&S team will also be joining hands with Syral , Europe’s leading brand of premium starch and wheat products, to introduce its 100% natural wheat protein. An excellent source of protein with much less fat content than its meat counterparts, wheat protein can also enhance the satiety and texture of baked goods like bread. It can also be incorporated into a variety of other food products like non-dairy creamers, meat products, snacks, cereal bars and cholesterol-free dressings.
